I found a couple of things that helped the situation. I've got about 43k miles
on my C5 now and the oil consumption is down to maybe 1qt every 5000 or so.
Not great, but livable. To lower the consumption, I found that always using 6th
gear on the highway helped a lot. The C5 is pretty gutless in 6th at 75mph,
so when I first got it I would leave it in 5th.
Now, I typically always try to keep the rpm around 2000-2500 (or less) for normal
driving. This seems to help too.
I also try to minimize the amount of compression down shifting. Yeah, it sounds
really cool, but I think those compression pops are when the oil is blowing
by.
Finally, I think that at 43k miles, its finally just mostly broken in. With the
2001 model year, Chevy used new and much harder rings which didn't like to seat.
Other than that, I totally love the C5 and have had little or now other problems.

Probably, but not necessarily. Just make sure the stereo you get has both Amplifier
out (at least 50 watts/channel) AND line level outputs. If the setup is
anything like on the C5, the front door speakers are power with amplifiers internal
to the speaker module, but the rears are powered off the head unit. So,
when replacing the deck only, you'd need hybrd output.

Depends on what kind of speakers (tweets, woofers, etc). If you wire two speakers
in parallel, and ones a woofer and the other is a tweeter, you might be able
to do it. Depends on the impedance of the speakers and the impedance capabilities
of the amp driving it. Might need to add a passive crossover. Try it
and see. Watch for relative volume levels, distortion, and clarity when connecting
two compared with one.

There's probably going to be a big-old fat connector plugging into the back of
the factory stereo containing all of the various wires to the speakers, power,
ground, and what not. You should easily be able to find an after market mating
connector on the web or where ever, that will plug into that connector and
give you pigtails that you can wire up to an after market head unit.
