Welcome back, Ben. Here are a few sites to check out.
1. A fellow named Steven James programmed his own foam cutting CNC to
carve out wings, winglets, and canard cores so you don't have to mess
with the hotwire: http://www.eurekacnc.com/
2. FeatherLite (strake leading edge manufacturer) is still in
business according to recent rumors. No website or online presence,
but folks are still able to obtain gear bows and nose gear legs from
them. The last phone # I saw was 707-462-2939.
3. A couple of Cozy-building gals picked up where Brock left off with
parts fabrication. Great quality parts and the "girrrls" (as they're
called) are nice to do business with. Their site is here:
http://www.cozygirrrl.com/aircraftparts.htm
4. Dennis Oelmann regularly offers finished spars, wings, and canards
for Cozy aircraft. He's certainly capable of doing the same for a
Long EZ. You can find his contact info posted on the canard forums
mentioned below.
Finally, as Dale pointed out, there's plenty of online activity on
canard aircraft elsewhere. Check out:

Best of luck with the build!
