Can anyone explain why a builders log is necessary or useful. I keep
periodic progress photographs but do not keep a written log. I fail to see
the purpose of a day to day builders log.

When you go to the FAA and apply for a Repairman Certificate on your
airplane, you must be able to prove that YOU built it and did over 51% of the
work.
The log is that proof. Without the Certificate, you will not legally be
able to perform inspections or repairs on your airplane and will have to hire
a
A&P to do those tasks.
