Set up a pot of boiling water on a hot plate within reach of th probe and drop
the probe in. It should read close to 212F or 100C.

If it is close in this ramge it is probably ok.

Alternatively you can get cooking oil up over 300 deg F if you have a good thermometetr
to measure it.

You can also use a laser temperature sensor and read the CHT's on each 
cylinder with the probes exactly at the same point where the probes are 
installed on each cylinder.
