Paul-- my stainless discs are 1/8" thick and work fine. I personally woul
dn't have gone any thinner in the effort
of saving weight. You can build a stock Pietenpol with goodies like brake
s without it being too heavy.

As a reference point, mine are standard Cleveland discs (made for stopping a
much heavier airplane) and they are 0.210" thick.

I never use the brakes on takeoff or landing as they aren't nece
ssary unless you get yourself into
a dire straits approximating an impending ground loop.
Your hydraulics should provide a little more umph I would imagin
e.

very similar to what you
