If you switch the probe to a different cylinder, run it on the ground to see if the high temperature follows the probe. If your cyl head is really getting to 700 degrees you have a SERIOUS engine problem, and I wouldn't fly the airplane again until you have figured this problem out. It's probably the probe, if it was real the engine probably would have died before this. But strange things can happen - a Cont. 550 blew the cyl off the case and caught on fire, but the pilot said it kept running smoothly (It didn't end well).
