If I were you I think the way I would approach the problem would be to change as little of the existing mechanism as I could and then add what ever I needed to for the center stick. The first thing you would have to do is make the left stick removable like the right stick. Then if the center stick didn't work out like you want you could still put a stick in the standard position. If you ever sell the plane, that could be a selling point for someone who wants a traditional RV. For your center stick I think you could probably make it pivot where you want it to then make bell cranks and links to hook it into the existing mechanism.
