How do I terminate the pitot tube once it enters the fuselage? Do I change
to a different type of tube? What is the ideal routing?
I cant find any instruction in the plans regarding the Static port fittings
that go through the fuselage near the shoulder harness anchors--can anyone
help? What do I use for the static tubing?

Go to Safeair.com. scroll down to staic air kit. get the pair of optional
90 degree quick disconnect fittings to. Very nice stuff. I just did this
and have a picture if you like.

There is no standard answer for this. You have to decide what suits you
best. I can tell you what I did, but it's only one data point.
My Gretz heated pitot came with a 37-degree flared -4 AN fitting brazed onto
the end of a few inches of tubing. That sticks up into the wing. From
there, I have an AN fitting and about a foot or so of 1/4" OD aluminum
tubing. This is essentially a heat sink, at least in theory.
From there I transition to 1/4" OD polyethylene tubing, which runs
uninterrupted all the way up to the instrument panel. No break at the wing
root, nothing. I see absolutely no reason to have any unnecessary breaks in
the system.
The transition from aluminum to poly is accomplished with a short length of
1/4" ID silicone tubing, into the ends of which the 1/4" OD tubing ends
slip. I did use small hose clamps on the silicone, although I've been told
that's overkill.
The key to remember is that joints in the wing root are a pain in the butt,
because there's not enough room to get in between the fuselage and wing root
rib. You can easily run aluminum tubing into the fuselage and make your
joint under the pilot's seat or whatever, transitioning to poly there.
I chose polyethylene tubing because it's light, it's flexible, it's cheap
(Home Depot or Lowes), etc.
