From: "Pete Cowper" <petercowper@att.net> As long as your engine runs long enough for all the crankcase oil to get a chance to run by the superheated pistons and rings it will easily exceed the 212F boiling point of any water condensation present in the oil. That is the reason for always running your car long enough in cold weather to cycle the oil sufficiently through the engine. The oil temperature gauge is actually more important to check your engine oil cooling system effectiveness to see how cool your engine oil returns to after being heated up in the hot spots of the engine.
