What stops the fuel from the aux tank flowing down and into the existing main tanks?

In the 52, flapper valves. In the 78 50, nothing. It is a direct gravity feed without
a back flow flapper valve. In the later 50's, it is manually done with
a transfer pump.

The standard non-return valves which normally stop the fuel cross-feeding
from one wing to the other.
