With good ventilation, just wipe as you go. Use rubber gloves. Don't use MEK because of the damage you can do to your flesh and internals. Wear a filtered respirator for paints if you've got a lot to do. I had to use acetone to remove paint and primer from my wheel pants, stabilizer and rudder as do overs during painting three years ago. Perhaps a stripper used in the marine industry would be suitable.
