I was thinking about this, and I doubt that the sensitivity of the human eye to different colors of light is very important. If you had two different colors of light, and the sensitivity of the eye was only 50% at one color relative to the other, you would just boost the brightness by a factor of two at that color for equal perceived brightness. This would not be very costly in power consumed.

What is more important, I think, is the contrast that is perceived with different colors of light (when looking at non self-illuminated surfaces). If I’m looking at a map, I want a colored light that provides the best contrast for the detail on the map. I’m not sure what color that is though, red probably is a holdover from dark rooms. I do know that waaay back in the day, when Radiologists looked at fluoroscopic images that were not very bright, as Image Intensifiers had not been developed yet, they would wear red glasses if they had to go out into brightly lit areas between studies to preserve their scotopic vision.

For very low levels of intensity (scotopic vision), the sensitivity of the eye is mediated by rods, not cones, and shifts toward the violet, peaking around 507 nm for young eyes; the sensitivity is equivalent to 1699 lm/W[9] or 1700 lm/W[10] at this peak. For low light illumination ideally we would illuminate with a source of 507 nm.

That makes me think of using red cockpit lights at night.
Every pilot knows that red light does not ruin night vision as much as white light, right?
But is that really true? Are builders installing red lights for naught?
Is this another old wives tale that never dies?
Dim red lights are used in camera film dark rooms. So if red lights are good for film, they must be good for our eyes too, or so the reasoning goes.
What are the physics?

If you're looking at a color map or page of information in multiple colors
you will need white light to illuminate all colors on the object . If you
were to use monochromatic light, say red, then any area on the page in red
would disappear as it will absorb all the red light and thus appear black
and if the red is on a dark background it will disappear into the
background altogether. This is a reflected light scenario. If you are
backlighting a gage then blue green light will produce the greatest visual
acuity with the lowest level of luminous intensity. It appears some
automotive dashboard lighting has incorporated this piece of spectrum for
illumination as it provides good visual acuity without flooding the field
with excessive illumination that then forces the iris of the eye to
contract and reduce the amount of light entering the retina.
