I agree with Mike. You might be able to find a clear coating that has enough UV
absorbers to stop yellowing in the coating, but it may not be enough to protect
the wood. The only way to know for sure is to test each coating, a time consuming
and costly process. It would be better to use a wood that would not be
as prone to yellowing, such as Ash or Maple.

I would suggest using white ash as my floorboard cross members have not darkened
over time like the other woods on the plane.   I know
you'd like to use the hedge wood but don't see how you can avoid the darkening.
